This year for a big anniversary project we purchased a pallet of ruby couverture chocolate from Callebaut — unfortunately our limited-edition product did not sell well. We need to ship out all of our leftover cacao this winter during the cold weather season to offer the cheapest shipment options — our loss is your gain! Ruby Chocolate is made exclusively by Callebaut. These are unopened containers which have been held in professional storage to maximize their shelf-life. This is couverture chocolate: a blend of cacao with exceptional cocoa butter content, yielding a smooth mouthfeel & fluid texture like none other. Ruby cacao has the flavor of “berries & cream”, & is naturally pink in color. These chips can be enjoyed as-is, used in baking, or melted/tempered for fine confectionary. Shipping from San Diego, California. Only standard shipping materials are included — NO insulated “hot weather” liner materials are included (though they can be quoted for additional fee). To ensure your cacao does not melt in shipment, we do not advise shipping to locations warmer than 85 degrees. If the chocolate does melt, is it not ruined; you only need re-temper it to return its normal crystallization/texture, or use it in baking as-is.
